FUSTIN Olivolja

About us

A small-scale craft produced in an old-fashioned way by an enthusiast family in Croatia and Sweden. The olives grow naturally in difficult-to-reach and rocky coastal terrain in Croatia and are picked one by one by hand like cherries to avoid picking damage (not like the usual “hand picking” through branch scraping and ground fall). About 8 kg of olives need to be picked for each liter of olive oil. The olives are then stored in a special, natural environment in a way that was used in the past to protect the olives from oxidation. During storage, the olives develop a round and nuanced flavor while the environment preserves their antioxidants. This is followed by cold pressing, exclusively through mechanical methods. The oil is drained and packaged by hand in Sweden.
